About the Recipe

Mini Rasgulla Kheer is made by adding mini Rasgulla in thick milk pudding. It is a keeper dessert recipe for your parties, where you can make a big batch to cater to a large crowd. A time saver for those are pressed on time but want to something homemade for your loved ones.

Ideal dessert for your Diwali parties, Holi celebrations or house warming parties.

What is Mini Rasgulla Kheer/Rasgulla Rabri

Kheer is thickened milk pudding with additional ingredient like rice, broken wheat (daliya) or vermicelli known with different names. Chawal Kheer or rice kheer is one of the most popular traditional Indian dessert recipe.

Rasgulla are sweetened balls made with fresh Indian cottage cheese/chenna, also one of the most favorite Indian Dessert. It is made by cooking small dumplings of Chenna/ Indian Cottage Cheese in light sugar syrup.

So Mini Rasgulla Kheer is mini rasgulla added to thickened milk. You can also call it Chenna Rabri (cook milk to rabri consistency).

It is an adaption of Chenna Payesh (as popular in West Bengal) or Chenna Kheer( in North India).

My family loves this kheer as they get the double treats of rasgulla and kheer. Making this may seem like a long process but believe me, it is very easy.

How to make Rasgulla Kheer

The recipe is divided in three parts

  • first one is making chenna/fresh cottage cheese/fresh paneer from milk
  • then making mini rasgulla
  • third is making kheer or rabri from milk.

Make Chenna/Paneer from milk

  • In a pan boil 1 l or 4 cups of whole fat milk.
  • When the milk starts to boil add around 1 tbsp of apple cider vinegar/lemon juice to milk.
  • The milk will curdle and the milk solids will separate from whey. Leave it for 10 minutes.
  • Strain the cheese solids/fresh paneer using a muslin cloth/cheesecloth. Don't discard the whey(leftover water), it can be used for making gravies, kneading dough for breads(Bhaji Stuffed Pav) and chapatis.
  • Squeeze out the extra water from the cheese/chenna and keep it under some heavy weight for 15-20 minutes. Fresh Cheese/ Chenna/ Paneer is ready for use.
  • Pls note, with 1 l of milk you will get around 200g of chenna. It also depends on the quality of milk.

Stepwise pics to make Paneer/Chenna

Boil milk in a thick bottom pan
When milk boils, take it off the flame
Apple cider vinegar
Add apple cider vinegar
mix it in milk
Leave it to rest for 5 min, milk will curdle
Milk solids and whey seperates
Strain in a cheese cloth
squeeze out the water
Strain the water completely
put some heavy weight on it
Chenna/fresh panner/cheese is ready for use

Make Quick Instant Kheer/Pudding

For making Kheer/thickened milk, I used condensed milk to make quick kheer.

  • In a heavy bottom pan take 1.5 l of milk heat milk on medium to low flame. You can adjust the quantity of milk as per your requirement.
  • When the first boil comes, lower the flame and keep on cooking the milk till it starts to thicken, add few chopped nuts like almonds, cashew nuts and raisins, 200 g/ half can of condensed milk and stirring continuously.
  • Add 4-5 saffron strands and 1/4 tsp of cardamom powder to it.
  • Keep the flame low and keep on stirring the pan so that the milk doesn't burn at the bottom.
  • After cooking 5-10 minutes, switch off the flame and take away the pan from the cooktop. Keep it cool down.

Stepwise pics to make Quick/Instant Kheer

Boil milk in a thick bottom pan
Boil the milk on medium flame
When milk starts to thicken add chopped nuts
Add 1/2 can or 200g of condensed milk
Mix well and cook on low flame, stirring in between
Cook till the milk thicken to desired consistency

Making Chenna balls/Mini Rasgulla

  • Take around 100g Chenna/fresh Paneer/Cheese in a plate or kneading bowl, knead chenna well, till soft and smooth.
  • Make very small balls and keep in a plate/bowl covered with damp cloth. This will give you around 20 mini chenna balls.
  • Take 2 cups of water in a pressure cooker add a cup of sugar to it and let it boil.
  • Once the syrup starts boiling add chenna balls, close the lid of the cooker after one whistle, lower the flame and cook for another 10-15 minutes.
  • Turn off the flame and once the pressure escapes, take out the chenna balls from syrup and add to kheer/rabri. Drain off the excess syrup.
  • Keep kheer/pudding in refrigerator to cool. Serve chilled garnish with almonds and pistachios.

Fresh Chenna/Cheese
Take in a plate, knead it smooth and make small balls out of it
Put chenna balls in boiling sugar syrup
Cook with pressure cooker lid closed for 10-15 minutes
Cooked Chenna balls
Add to kheer/rabri/thickened milk
Chenna Kheer/mini rasgulla kheer ready to be served

Note- You can chill these mini rasgulla and serve without kheer also.

Can I use store bought Rasgulla to make it

If you are a working professional and pressed on time, then you can use store bought rasgulla/rasbhari and make instant rabri or kheer, assemble it, chill and serve. A quick easy dessert ready within 30 mins.

Serving Suggestions

Chill it and serve in small bowls or shot glasses. Stays good for about 2-3 days in refrigerator.

Store it in an airtight container. Since it is a milk product consume it with 2-3 days.

Equipment

  • Heavy bottomed Pan
  • Pressure cooker

Ingredients
  

To make Chenna

  • 1 L Full Fat Milk
  • 10 ml Apple Cider Vinegar

For Kheer/Thickened Milk Pudding

  • 1.5 L Full fat Milk
  • ยฝ Can Condensed Milk or 200 gm
  • ยฝ Cup Raisins and Mixed Nuts (Almonds/Cashew Nuts)
  • ยผ tsp Cardamom Powder
  • Sugar very little if required

For Making Chenna Balls/Mini Rasgulla

  • ยฝ-ยพ Cup Chenna/Fresh Cottage Cheese
  • 1 Cup Sugar 200 gm
  • 2.5 Cups Water

Instructions
 

Make Paneer/Chenna

  • Boil milk in a heavy bottom pan.
  • When milk boils, add vinegar, let it stand for 5 mins, once the milk curdles, strain it in a cheesecloth and squeeze out the water and keep aside.

Make Kheer

  • To make Kheer/pudding, put milk to boil in a heavy bottom pan, on medium flame. Let the milk boil for 5-10 min.
  • When milk starts to thicken add chopped nuts, raisins and add condensed milk and give it a nice stir.
  • Let it cook in low flame. Keep on stirring in between.
  • Cook for another 5-10 in, take care that it doesn't burn. Let the milk thicken to desired consistency, take it off the flame and keep it to cool.

Make Mini Rasgulla / Chenna Balls

  • Meanwhile, make chenna balls. Take chenna/paneer in a plate, knead it to a smooth and soft dough.
  • Make very small balls and keep it covered with damp cloth.
  • Add water and sugar together in a pressure cooker, make sugar syrup. Once the syrup starts boiling add chenna/cheese balls.
  • Put the lid on the pressure cooker, let one whistle come and then lower the flame, cook for another 10-12 min.
  • Switch off the flame, once the pressure is down in cooker, take out the chenna/cheese balls, add to the kheer.
  • Put the kheer in refrigerator to cool. Serve chilled garnished some finely chopped nuts.
