Soft and Chewy White Chocolate Cranberry Cookies Recipe | How to make White Chocolate and Cranberry Cookies. Detailed recipe and stepwise video

With holiday season round the corner, let's bake one of our favorite White Chocolate and Cranberry Cookies.

Delicious cookies that stay fresh for a week and are great to have with a cup of coffee /cappuccino or HOT CHOCOLATE.

Soft and Chewy White Chocolate Chips Cookies are perfect to be packed in your cookie gift boxes or Cookie trays. These are insanely delicious soft and chewy with the bits of tangy cranberry and white chocolate chips in every bite.

Moreover, these are made with Whole Wheat Flour and Oats Flour.. now say no to All Purpose Flour(APF) or Maida and make perfect chewy cookies with a much health friendly flour.

My kids and hubby loves these cookies. For special occasions I make these along with other cookies and pack in beautiful gift packs for my family and friends. These are hit among all the age groups .

Make 4 cookies from one cookie dough-- One Basic Cookie Dough and 4 variations

Ingredients to make White Chocolate and Cranberry Cookies

Flour- I used a combination of Whole Wheat Flour and Oats Flour. You can use All Purpose Flour or a combination of both of all the three flours or either of the two.

To make Oats flour grind instant or rolled oats to fine powder. I use my regular Whole Wheat Flour which I use to make chapatis.

You can also add 1-2 tbsp of cornstarch for really soft cookies or rice flour for a bit crisper cookies. Substitute the flour in the recipe with 2 tbsp of cornstarch.

Please Note: The texture of cookies is different from what we get by using All Purpose Flour or Maida. You can use it if you want cookies like the commercial ones.

Butter- To get the melt in mouth buttery cookies, I love to make cookies with butter. Never used oil/coconut oil in the recipe so can't comment.

Sugar- Organic Raw Cane Sugar is my first choice to use in cakes in cookies. You can also use castor sugar.

Milk- Use very little just to bind together the cookie dough. Add milk one tbsp at a time.

Baking Powder as the Leavening agent.

Good Quality White Chocolate Chips, Dried Cranberries, Vanilla Essence

I have used White Chocolate Chips in the recipe. Roughly chopped white chocolate can be substituted in place of chocolate chips.

Feel free to add chopped nuts like pecans, macadamia etc.

How to make White Chocolate Chips Cookies

  • Cream together butter and sugar. Also, add vanilla essence.
  • Add the dry ingredients, cranberries, white chocolate chips. Then add very little milk 1 tbsp at a time and mix/fold very lightly.
  • Chill the dough for a couple of hrs ( 1-2 hrs min.) to get the perfect cookie.
  • Preheat the oven and line the cookies dough balls on baking tray..
  • Bake in a preheated oven at 180°C or 350°F for 15 mins.
  • Once done, take out and leave till the cookies cool down completely.

Tips/Pointers on how to get perfect White Chocolate Chip and Cranberry Cookies

  • Fold the dough very lightly. Just get it together. Overmixing the dough gives dense dry and hard cookies.
  • Do not add milk all at once as the dough will get very wet. Add 1 tbsp at a time. We need milk not more than 2-3 tbsp.
  • Scoop out the cookies with a spoon or ice cream scooper or use your eyeball estimation, this ensures same size and uniform baking of all the cookies.
  • Once the cookies are baked do not transfer immediately from the baking tray. Cookies are very soft and delicate when warm and may break if touched.
  • Once the cookies are completely cool ,and store in an air tight container.

Storage and Shelf Life

White Chocolate Chips and Cranberry Cookies stay good for a week. Store in air airtight container.

Can we freeze the cookies or the cookie dough

Yes I have freeze dough many times. But never did with the cookies.

To freeze the dough, you can make small dough balls (scoop the dough), line on baking tray and chill for about 30 mins. Then and keep in a freezer friendly zip lock bag/container(preferred).

To bake the frozen cookie dough balls, preheat the oven and then line the dough balls on baking tray and bake for 12- 15 mins or till the edges start turning light brown.

You can make these cookies along with your favoutie cookies and pack in a beautiful gift boxes for gifting on Christmas , Thanksgiving and Diwali!!

Ingredients
  

  • ½ Cup Whole Wheat Flour(Whole meal)
  • ½ Cup Oats Flour
  • ½ Cup Raw Cane Sugar
  • ¼ Cup Butter I used salted butter
  • ½ Cup White Chocolate Chips
  • ½ Cup Dried Cranberries
  • 1 tsp Vanilla Essence
  • 1 tsp Baking Powder
  • ¼-1/3 Cup Milk

Instructions
 

  • Mix together whole wheat flour, oats flour, baking powder. Add pinch of salt if using unsalted butter.
  • Mix well using a whisk or fork.
  • In a mixing bowl, cream butter and sugar. Also add vanilla essence.
  • Add in flour mix, white chocolate chips and cranberries.
  • Add about milk, little by little. Use as much as required. Depends on the flour used.
  • Fold the dough lightly.
  • Chill it for at least 2 hrs. You can also refrigerate it overnight .
  • When ready to bake, preheat the oven to 180°C or 350°F.
  • Scoop out the dough and line on the baking tray. Use and ice-cream scooper or a spoon to get the uniform sized cookie dough balls for even baking.
  • Till the time the oven is preheating, refrigerate the baking tray.
  • Bake the cookies for 12-15 mins. at 180°C or 350°F.
  • Once done , take out of the oven, cool completely on the counter and then store in an air tight container.

    Cranberry cookies are irresistible and decadent. Loved how you have replaced the APF with wheat flour and oats making it healthy .also white chocolate is a nice change to the usual dark chocolate cookies
