Chocolate Cherry and Hazelnuts Cake(with Coconut flour) | Healthy Gluten-free Chocolate cake made with Coconut flour topped with fresh cherries and hazelnuts, without any synthetic sugar.

The soft and moist Low Carb, Protein Rich Gluten-free Chocolate Cake with Coconut Flour and raw sugar, is not only delicious but also healthy snack or dessert treat for your kids and family.

This moist and yumm Chocolate Cherry and Hazelnut Cake with the goodness of Coconut flour, nutty Hazelnuts and fresh cherries on top. The recipe is contains egg and I have used jaggery powder as sweetener. This makes this cake a delicious healthy dessert treat for your family.

My kids love chocolate and this is one of their favourite Chocolate cake with Hazelnuts and Cherries

Delicious and ohh.. so chocolatey cake, for my chocolate loving kids.. their vacations are going one and most of the time they are home except a few activity classes. I keep my stock of homemade goodies for them , so that they have something to munch on when they get hunger pangs in between meals or something to have with milk. Instead of getting the store bought stuff, they love having home baked stuff. My elder one loves to gorge on cookies, cakes and stuff like. But now as she is growing up fortunately, she now knows the importance of healthy and calculated eating . My 8 yr old follows what the elder sis does. They do love to get goodies once in awhile from stores but always look forward to what I bake for them.

Baking with health friendly flours

Years back when I started baking I used all-purpose flour. Now slowly and gradually I have stopped using all-purpose flour(APF) or maida. The shift was gradually towards Whole Wheat Flour(WWF) + APF, then only Whole wheat flour and now gluten-free flours like Almond flour. I like to use a combination of healthy flours like Ragi, Whole Wheat, Almond and Coconut Flour. It's been a long time now that I am using it for baking cookies and cakes, check Fudgy Almond Chocolate Cake with Almond Flour.

Baking with Coconut Flour

I recently started baking with Coconut Nut flour and am happy that kids too like the nutty coconut taste that one gets in coconut flour based cookies and cakes. Coconut Flour is gluten-free and is very low in carbohydrates and rich in protein and fibers.

Since it is a gluten-free flour, it is not easy to work with it. Baking with Almond Flour is much easier than Coconut Flour. This flour is very dry and absorbs lot of liquid. The resultant bake can be quite crumbly and dry.

The texture of the final bake is of quite different texture than the WWF or Almond Flour.

To get the good structure and texture in coconut flour bakes, many recipes use lot of eggs. Eggs hydrate the flour and give structure to the final bake.

Pair it up with other gluten-free flours like Almond Flour, Hazelnut flour Oats Flour or add 2 tbsp of tapioca flour or cornstarch to every 3/4 Cup of Coconut flour to enhance the taste and baking properties. IF there are no diet(Gluten-free) restrictions then you can also use Whole Wheat Flour.

You can also bake egg-free coconut cakes and muffins, but the result is quite crumbly and will be on drier side. Any of the egg replacers like cooked Fruit Purees or mashed bananas, Flax Meal, Chia Seeds or buttermilk( prepared with any plant based milk and vinegar) are good.

Haven't made the egg-free version, so can't comment on how the result will be with egg replacers.

Nutritional Value of Ingredients used in this Gluten-free Coconut Flour Chocolate cake

This gluten-free cake has Coconut Flour that is rich not only in proteins and fiber , low in carb but also exceptionally rich in manganese, an important mineral for bones.

Though Cocoa powder does not have any direct health benefits, but is is rich in polyphenols. To know about the health benefits of Cocoa click here..

You can now also use Cacao in place of Cocoa Powder, which is a much nutrient rich choice than the later.

Hazelnuts are a rich source of vitamins and minerals like vitamin E, manganese and copper. Additionally, they have a high content of omega-6 and omega-9 fatty acids. Also, these have high content of Omega Fatty Acids. To more about nutritional benefits of Hazelnuts click here..

Kids love cherries and I added finely chopped just to add on to the taste of cake. Cherries are rich in antioxidants, Vit. C and minerals. Know more here..

Equipment

Ingredients
  

  • ½ Cup Coconut flour
  • ¼ Cup Cocoa Powder
  • ¾ Cup Jaggery Powder or any raw sugar(see notes)
  • 6 Eggs
  • ¼ Cup Olive Oil or Coconut Oil
  • ¼-½ Cup Finely Chopped Fresh pitted Cherries
  • ¼ Cup Finely Chopped Hazelnuts
  • 1 tsp Baking Powder
  • 1½ tsp Vanilla Essence
  • ¼ tsp Salt

Instructions
 

  • Preheat oven to 325°F or 162°C.
  • In a mixing bowl, mix oil and jaggery or sugar.
    ¼ Cup Olive Oil, ¾ Cup Jaggery Powder
  • Add eggs, vanilla extract and beat well.
    6 Eggs, 1½ tsp Vanilla Essence
  • Sieve together flour, baking powder, cocoa powder and salt.
    ½ Cup Coconut flour, ¼ Cup Cocoa Powder, 1 tsp Baking Powder, ¼ tsp Salt
  • Add flour and fold with egg mix.
  • Fold in half of chopped nuts and chopped cherries.
    ¼-½ Cup Finely Chopped Fresh pitted Cherries, ¼ Cup Finely Chopped Hazelnuts
  • Transfer the batter to 8" cake tin.
  • Top with roughly chopped cherries(optional).
  • Bake cake in preheated oven at 325°F for 40-50 minutes.
  • Cake is baked when it starts leaving the sides . Do the toothpick test to check the doneness.
  • Take out of the pan very carefully.
  • Cut once it cools completely.

Notes

You can add pecans or walnuts or almonds instead of Hazelnuts.
You can also bake the cake without hazelnuts and cherries.
I have used jaggery powder, you can also use any good quality brown sugar or raw sugar(coconut /palm sugar, raw cane sugar).
Let the cake cool completely and then cut it.
If you you do not like the idea of using too many eggs in the recipe as many times some people smell eggs in cake, add 1/4 cup orange juice or freshly grated orange zest.

    How much cherries would you use for this recipe roughly? I'd like to use as much as I can but don't want the cake to turn too wet because of it.

    Coconut flour is slowly warming upto me, although I would prefer to bake with this or almond flour these days.. we too are taking a non-GF , vegan route to baking and cooking at home, slowly but steadily ! this cake with all good ingredients looks so delish, Swati !
