Mix Veg Khichdi  with mixed Dal can be made with the veggies and lentils of your choice that you use to make Khichdi. I have used Yellow Split Moong and Green Split Moong and Red Lentils to make it along with rice.

Also, you can add any seasonal vegetables here, like any leafy greens, carrots, corn, cauliflower, peas, cabbage etc.

What is Khichdi

Khichdi is an ancient food that finds it’s mention in various ayurvedic texts. Light Khichdi made with split moong beans and rice is popular detox food in Ayurveda. It if one of the first solid food given to babies

It is a light meal made with combination of Rice (mostly) and lentils. We can also add Dalia or other grains like Bajra, Oats, Brown Rice, Quinoa in place of Rice. Many variations of Khichdi are popular in Indian Sub Continent.

Also, different veggies (seasonal and regional) can be added to Khichdi if you want to make wholesome nutritious one pot meal.

Mix Veg. Khichdi for Makar Sankranti

Khichdi is one of the main dish that is prepared in North Indian States. In Uttar Pradesh we make Chilka Urad Dal Khichdi with Chilka Urad (Split Black Gram). Makar Sankranti one of the most auspicious days celebrated as harvest festival across India in different ways marks the movement of the sun towards North ending the chilly winter in the Northern States.

The festival is celebrated all over India with different names. Like Magh Bihu in Assam, Maghi (Lohri) in Punjab, Haryana and Himachal Pradesh, Makara Sankranti in Maharashtra, Odisha, Goa, West Bengal (also known as Poush Sankranti) , Pongal in many South Indian States, Sankranti in Andhra Pradesh and Telangana region.

The festival is marked with different celebrations in all the states. Like kite flying in Gujrat, Rajasthan and some parts of Uttar Pradesh.  Haldi Kumkum(a ceremony) is celebrated by married ladies in Maharashtra. In Uttar Pradesh we donate raw Khichdi(mixed dal and rice) and fresh vegetables , jaggery and sesame seeds to poor and needy people.

Significance of Sesame Seeds in Makar Sankranti

Sesame Seeds have a lot significance during this duration. Sesame Seeds are known as the Seeds of Immortality

According to religious beliefs, sesame seeds were blessed by Lord Yama, the God of Death, and are hence referred to as the seeds of immortality. As per another legend, sesame seeds are nothing but solidified forms of Lord Vishnu’s sweat that fell on the ground. However, the sweat referred to here has a more profound meaning. It is a part of the divine, and hence sacred.

Moreover, til (sesame) finds a mention in several sacred texts. Interestingly, sesame seeds can be used for six different purposes. And they are also believed to be the vehicle or the food of the departed souls. Hence, black sesame seeds are used while performing Tarpan (a ritual meant for pay ode to dead ancestors).

Serving Mix Veg Khichdi

Khichdi is best served with plain curd  or yogurt papad or papadums of your choice with salad and pickle or chutney. On Makar Sankranti we make Bathua Raita, as this is a special winter green that is available in North India. You can make any other raita of your choice also.

Equipment

  • Pressure cooker
  • Ladle
  • Knife
  • Chopping Board

Ingredients
  

  • ¾ Cup Rice
  • ¼ Cup Dhuli Moong Dal/ Lentil
  • ¼ Cup Chilka Moong Dal
  • ¼ Cup Malka Masoor/Red Lentils
  • 1 Cup Chopped Spinach
  • 1 cup Mixed veggies(Carrots, Beans, Peas, Potatoes)
  • 1+1 tbsp + tsp Ghee/Oil
  • small Ginger piece
  • 1-2 Green Chillies
  • a pinch Hing
  • 1 tsp Cumin Seeds
  • ¼ tsp Turmeric Powder
  • Salt as per taste

Instructions
 

  • Wash rice and all the lentils nicely.
  • Soak in enough water for about 10-15 mins.
  • Finely chop vegetables (carrots, beans, cauliflower, potatoes) whatever you are using.

Indian Pressure Cooker Recipe

  • In pressure cooker, heat oil on medium flame. Add hing and cumin seeds once seeds crackle add mixed vegetables.
  • Sauté for 1-2 mins. Add finely chopped spinach leaves.
  • Drain water from soaked Khichdi. Add khichdi to pressure cooker.
  • Add turmeric powder, salt and then ad water. About 3-3½ cups water for 1½ Cup of Khichdi. Adjust water as per the consistency you prefer.
  • Close the lid and cook for 2 whistles on medium flame and then 5-6 mins on low flame.
  • Switch off the flame and wait for the pressure to go off.
  • Open the lid and check the consistency of khichdi. You can add more water if you want thinner consistency.

Instant Pot Method

  • Switch on the Instant Pot to SAUTE Mode for 10 mins..
  • Add ghee/oil. Once the display shows HOT. Add hing and cumin seeds once seeds crackle add ginger chilli paste, sauté for a while.
  • Add mixed vegetables, sauté for a few seconds, then add chopped spinach.
  • Drain water from soaked Khichdi. Add khichdi to pressure cooker.
  • Add turmeric powder, salt and then ad water. About 3-3½ cups water for 1½ Cup of Khichdi. Adjust water as per the consistency you prefer.
  • Cancel the SAUTE Mode. Close the lid and then set the PRESSURE COOK Mode for 10 mins. Press the START button.
  • Let the Khichdi cook. Once the timer goes off, wait for 2-3 mins.
  • Then do Quick Release Pressure(QRP).
  • Open the lid and check the consistency of khichdi. You can add more water if you want thinner consistency.

Prepare Tadka

  • In tadka pan or small pan, add ghee as required about 1tsp, add cumin seeds once seeds crackle, add whole red chilli.
  • Transfer the tadka to khichdi.
  • Top with Sesame Seeds for the auspicious occasion of Makar Sankranti.(Optional)
  • Serve hot with curs/raita of choice, papads, salad ad chutney or pickle.

Notes

We can't think of having Khichdi without Ghee but Vegans can substitute it with any flavourful plant based oil. Also, you can avoid tempering/tadka for low oil/ghee Khichdi.

  2. Khichdi looks so tempting Swaty. Adding hing cumin ginger green chili with mixed dal and vegetables will definitely taste great and makes this khichdi flavorful. Not only sankranti but this khichdi is also perfect for any busy day specially in winter.
