Chinese style Veg. Fried Rice is a simple rice dish packed with flavours and loaded with veggies. It is one of the most popular Indo Chinese dishes served in restaurants, dine-ins, relished by many as street food and made at home.

Fried rice in Chinese flavours is crowd pleaser and one of the best ways to use leftover rice.

Why make Veg. Fried Rice

This Chinese Style Veg. fried rice is

  • vegan( free from any animal/dairy products),
  • kids friendly(adjust the spice level as per your kids preference),
  • kids favourite lunch box dish
  • can be made Gluten-free(use tamari or gluten-free soy )
  • one of the best ways to use leftover rice
  • you can make it ahead of parties and get togethers
  • quick and under 30 mins. recipe if you already have cooked rice
  • Freezes well and you can make for week meal planning

Indo Chinese Cuisine is very popular among all the age groups. We all love to make it at home or enjoy it as street food or order in fine-dine ins. I am sure is it a hot favorite among moms when it comes to feeding different veggies to kids.

My kids love taking fried Rice in their lunchbox. Many times I make extra rice for our meals and next morning make fried rice from the the leftover rice and pack for their lunch.

Ingredients for Veg. Fried Rice Recipe (Chinese Style)

Cooked Rice-The first step in making fried rice is making steamed rice. If you have cooked rice in refrigerator, it takes just a few minutes to make fried rice.

It is always best to make Fried Rice with refrigerated rice that is made a day ahead or few hrs earlier. It helps to dry the rice and gives it a good texture. If you make fried rice from fresh hot rice, your rice may become sticky.

I always use basmati rice for making rice-based dishes and it is great for making Chinese Fried Rice. You can use any variety that you like, just make sure that cooked rice should not be sticky.

Vegetables- For this recipe, I have used capsicum/green bell pepper, french beans, carrots, sweet corn, cabbage, and onion and spring onions. Ginger and Garlic to add the flavours.

You can use any kind of vegetables like colored bell peppers, zucchini, mushrooms, baby corn, peas and many more as per your choice.

Sauces- Soy Sauce, Vinegar(Rice or White), Sriracha/Chilli Garlic Sauce.

Spices- Black Pepper powder, Oil(any good plant oil).

For Gluten-free version you can use Tamari sauce (check for gluten-free).

How to cook Vegan Fried Rice(Chinese Style)

How to cook Rice for Fried Rice

The first step in making fried rice is cooking rice. To cook rice, take a cup of rice, wash and soak it in water for around 15-20 minutes. Take a pot fill it with water(1 and 3/4 cup), switch on the flame. When the water just starts to boil, add rice to it and stir gently. When the steam starts forming, cover the pot and reduce the flame to low. Cook covered for next 10-15 minutes. When the water dries out, take the pot off the flame and let it stand for another 5 minutes. Gently fluff the rice with a fork. Let it cool in the pot, refrigerate it when it cools down completely and use for preparing fried rice.

Cook Fried Rice

Take frying pan or wok, add oil, when the oil is hot enough, add minced garlic and saute for few seconds. Do not burn garlic.

Add chopped vegetables, stir-fry for another minute. Frist add veggies that need to cook more like carrots, capsicum. Add chopped cabbage at last as it leaves water and turns mushy.

Also, do not overcook vegetable, keep some crunch. Do not add water while cooking vegetable. Only stir fry on high to medium flame.

Next, add the soy sauce, sriracha/chilli sauce, vinegar and black pepper powder and mix well.

You may also add 1 tbsp of tomato ketchup.

Now add rice, salt as per taste and then mix lightly.

Garnish with spring onion greens.

Serving Suggestions

Fried rice goes best with chinese gravy based dishes like Vegetable Manchurian, Vegetables in Hot Garlic Sauce , Chilli Basil Paneer

You can also pair it with dry Chilli Paneer, Air Fried Manchurian balls or even serve it just like that with spicy Schezwan sauce.

You can also top with roasted skinned peanuts or cashew nuts.

For protein you can add tofu(for plant based) or paneer while sauteing the vegetables.

Can we make ahead for parties or meal planning

Yes, you can make fried rice ahead of parties and for meal planning. Reheat in microwave or keep on preheat mode of your oven before serving.

Storing Leftovers

Refrigerate in air tight containers and finish by next day. Refrigerated rice stays good for 1-2 days.

Reheating Fried Rice

To reheat on stove, add directly to a pan or skillet and stir fry on high heat. Add a tsp of oil before adding rice and a tbsp of water if required.

To reheat in microwave add a tbsp of water and add cover with a paper towel and reheat for 2 mins at HIGH.

Reheat a big batch in an oven. Set the preheat mode on at 180C and keep rice covered with a foil. Spray or brush the tray with oil and add 1 tbsp water per cup of rice.

Can we Freeze Veg. Fried Rice

You can freeze fried rice upto 1 month in portions in small freezer friendly ziplock bags or containers.

Thaw it in refrigerator before reheating on stove-top.

To reheat in microwave add a tbsp of water and add cover with a paper towel and reheat for 2 mins at HIGH.

  • Wok/Pan
  • Ladle
  • Measuring Cups and Spoons

Ingredients
  

  • 1 cup Cooked Rice
  • ½ cup Finely chopped onion and spring onions
  • 1 tbsp Finely chopped Garlic
  • 1/2 tbsp Finely chopped Ginger
  • 1-2 Finely Green Chillies
  • ¼ cup Finely chopped Carrots
  • ¼ cup Finely Chopped Cabbage
  • ½ Finely Chopped Capsicum
  • 2 tbsp Boiled Sweet Corn
  • 3-4 Finely chopped beans
  • 1-2 tbsp Spring Onion Greens for garnish as required
  • 1-2 tsp Soy Sauce
  • 1-2 tsp Sriracha/Chilli Garlic Sauce
  • 1 tsp Vinegar(Rice/White Organic)
  • 1 tsp Black Pepper Powder
  • 2 tbsp Oil(Sesame/Rice Barn/Olive)
  • Salt as per taste

Instructions
 

  • Keep all the ingredients prepared and assembled before you start your cooking.
  • In a wok/pan, heat oil.
    2 tbsp Oil(Sesame/Rice Barn/Olive)
  • Add chopped garlic and saute for few seconds. Do not burn garlic.
    1 tbsp Finely chopped Garlic
  • Now add chopped onions and spring onions and saute for 1-2 mins. Keep the flame to low.
    ½ cup Finely chopped onion and spring onions
  • Now add chopped ginger and green chilli. Saute for 1-2 secs.
    1/2 tbsp Finely chopped Ginger, 1-2 Finely Green Chillies
  • Now add carrots, capsicum/bell peppers, corn and beans. Saute for 1-2 min. on high flame. Keep the veggies crunchy. cooking on slow flames releases the moisture and veggies may loose crunch.
    ¼ cup Finely chopped Carrots, ½ Finely Chopped Capsicum, 3-4 Finely chopped beans, 2 tbsp Boiled Sweet Corn
  • Now finely add chopped cabbage. It releases water so we add at last. Saute all the veggies on high flame. Take care the veggies don't burn.
    ¼ cup Finely Chopped Cabbage
  • Now add the sauce, soy sauce, sriracha, vinegar and black pepper. You can also add 1 tbsp of tomato ketchup.
    1-2 tsp Soy Sauce, 1-2 tsp Sriracha/Chilli Garlic Sauce, 1 tsp Vinegar(Rice/White Organic), 1 tsp Black Pepper Powder
  • Mix the sauces.
  • Now add cooked rice and salt. Mix lightly.
    1 cup Cooked Rice, Salt as per taste
  • Garnish with spring onion greens.
    1-2 tbsp Spring Onion Greens for garnish
  • Serve hot as required.

Notes

When using freshly cooked rice, cool it completely, refrigerate for a couple of hrs and then use in recipe. Do not add hot rice, fried rice may turn mushy.
Keep the flame low while sautéing vegetables, take care the veggies don't burn or loose crunch.  
Adjust the sauces as per your preference.
Adjust the chilli level as per your kids' heat tolerance. You may completely omit chillies and chilli sauce when making for kids. Add tomato ketchup instead.
You can add any other veggies also like mushroom, zucchini, colored bell peppers, cauliflower, baby corn.
Add tofu or paneer for protein portion. 
Take care while adding salt, as the sauces already have some amount of salt.
