Ingredients to make Sorghum Cookies/Jowar Cookies
Jowar Flour- Use fresh jowar flour. Do not use old flour as it develops a rancid taste.
Butter- for that buttery cookie flavour I use butter and kids love it. You can use substitute butter with oil in the recipe but cookies will have a different texture. They will not rise much and will kind of flat cookies.
Sweetener- I have used raw sugar (khand) available in Indian markets. You can use raw cane sugar or even castor sugar. Fine powdered jaggery or brown sugar can also be used in the recipe. It make cookies more chewy.
Others- Desiccated Coconut, Cashew nuts, Choco chips, Vanilla Essence, Baking Powder (as leavening agent).
Add salt when using salted butter.
You can add all three together (coconut, cashew nuts or choco chips) or substitute any with the other ingredients.
Instead of cashew nuts you can add chopped almonds, hazelnuts or pistachios.
