Avocado Salad made with creamy avocado, cherry tomatoes and cucumbers is a perfect side with your meals. It is easy and quick to make and you can adapt/add ingredients as per your likes.
This is one of those summer favourites, the best avocado salad recipe that you will want to make again and again in different variations. It is vegan, gluten-free and so delicious.
About the recipe
Summers or winters I love to have different salads with my meals or as a mini meal. This avocado salad is one of my favourite summer salad bursting out with flavours. The creamy avocado, juicy tomatoes and crunchy onions and cucumbers make it a hearty treat which we love to pair with our favorites like Veg. Pulao, Vegetable Biryani.
On days when I don't feel like having any grain I add some black/red beans or chickpeas /grilled paneer/cheese or simply have it just like that.

How to select Avocado
The key to any good Avocado recipe is a nice ripe avocado. It is a bit tricky for people to choose a perfectly ripe avocado.
If the avocado yields to firm gentle pressure you know itโs ripe and ready-to-eat. Ripe, ready to eat avocados may have a darker color but color can vary so it is best to go by feel as well as color. It will feel lightly soft but it will not feel โmushyโ to the touch. Ripe fruit is perfect for that day. Store in the refrigerator if you plan to eat it in a day or two to prevent the fruit from becoming overripe or spoiled.
Ingredients for Avocado Salad
Avocados: The best quality avocados are really do wonders with this recipe. Choose a nice ripe avocado, not a firm texture (unripe) or mushy(overripe).
Tomatoes- I have used cherry tomatoes in the recipe, you can use any tomatoes juicy and ripe.
Cucumber- English cucumber, persian or any local variety. Peel the skin if it is thick, like in Indian varieties. Also, cut vertically from center then scoop out the large seeds(if any).
Red Onion- Crisp and sweet red onion adds the crunch. Cut onion and soak in water for about 10 mins., this takes out the bitterness.
Herbs- Fresh Cilantro and Parsley. You can also add fresh dill, mint and basil.
Salad Dressing- Simple sweet and tangy lemon vinaigrette dressing is perfect for this creamy avocado salad. Quickly whisk lemon/lime, Red Wine Vinegar(optional), EVOO, chilli flakes, black pepper powder and your favourite dried herbs. A teaspoon of any sweetener balances the acidity and also adds hint of sweet taste.
How to make Avocado Salad
- Cut the avocado vertically from center. Lightly twist and open the cut avocado. Discard the seed. Cut in cubes or vertically as you like it.
- Chop cucumbers. Keep the peel else discard if it is thick. Also, discard the large seeds.
- I like to cut cherry tomatoes, you can keep it whole. Cut the big tomatoes in bite size. Discard the pulp and seeds.
- Cut onions and soak it in water for 10 mins.. this makes it more crisp and also takes out the bitterness from onion.
- Make dressing. Whisk together all the ingredients listed under dressing. Add salt and chilli flakes as per taste.
- Add dressing to salad and mix lightly.You chilli for few hrs before serving.
- Store in an airtight container or cover the salad bowl with a cling film.
Recipe Variations
Mango Avocado salad recipe- add sweet juicy ripe mango to make Mango Avocado Salad for flavour variation.
Mexican Avocado Salad- Add jalapenos, beans (black beans) or corn and make mexican avocado salad.
Make Quinoa Avocado salad with cooked quinoa.
Pasta Avocado Salad- Add cooked pasta for pasta salad version.
Add Protein- You can add protein like steamed sprouts, boiled Chickpeas to make Chickpeas Avocado Salad or any other protein like eggs for Avocado Egg Salad or Avocado Chicken Salad.
Add Cheese- You can also add crumbled Feta cheese or fresh mozzarella.
Add greens like lettuce, baby spinach, kale or arugula leaves.
Recipes Tips
Do not keep the salad open as avocado may get brown slightly after sometime. Though the oil in dressing protects it from getting black but only for sometime.
Do not overmix, as avocado may break making the salad more creamy.
Shelf life and Storing
Salad stays good for 1-2 days. I like it best when made fresh and we mostly finish it the same day. Leftovers can be refrigerated in an airtight container, finish it by the next day.
Serving Suggestions
Serve it with your meals or make gluten-free tacos with lettuce leaves. You can also serve it with tacos, burgers, Indian Pulao or enjoy it on it's own.
Serve it on toasted breads like Bruschetta.
It can also be served at your parties as an appetizer or salad with main meals.

- Salt as required
Instructions

- Chop the fresh herbs and add.Mixed fresh herbs as per preference
- Make dressing. Whisk together all the ingredients listed under dressing. Add salt and chilli flakes as per taste.1 Juice of Lemon/Lime, 2-3 EVOO, 1 tsp Dried herbs, 1 tsp Sweetener, Chilli Flakes as required, ยฝ tsp Black Pepper Powder, Salt as required
- Add dressing to salad and mix lightly. You can chilli salad for few hrs before serving.
- Store in an airtight container or cover the salad bowl with a cling film.
