This creamy Pumpkin pasta is made with creamy pumpkin pasta sauce, which you can use not only for making pasta but also can be used to make soup. Make a big batch and add vegetable broth and get a creamy comforting soup for chilly winter nights.

Ingredients to make Pumpkin Pasta Sauce and Pasta
To make Pumpkin pasta, firstly we cook the sauce. After that we add pasta and cook. You can double or triple the recipe and make only pasta sauce, store it and use whenever you need to make pasta.
Pumpkin- Fresh or frozen pumpkin cubes. You can use even use butternut squash, as it is easily replace with pumpkin. To make pasta sauce with pumpkin puree check the FAQ section below (How to make Pasta sauce with Pumpkin Puree).
Other vegetables- Carrots, Tomato. Marinara sauce or pasta sauce can be added in place of tomatoes. Check the FAQ section below.
Herbs- Ginger, Garlic, Basil (optional). You can use fresh Sage as it goes well with pumpkin dishes. I also like to add Italian herbs, you can add any other dried herb of your choice.
Others- Olive oil, Black pepper powder, red chilli flakes (as required).

How to make Creamy Pumpkin Pasta in Instant Pot
Before I bought Instant Pot, I always cooked pasta the traditonal way. After I bought IP making pasta become so easy, one pot affair. Now I also cook it in my Traditonal Indian Pressure Cooker.
- To make Pumpkin Pasta, firstly we will make Pumpkin Pasta Sauce.
- Switch on the SAUTE MODE of Instant Pot and set it to 5 mins.
- Then add oil and when the display shows HOT, add oil.
- Next add chopped onions and ginger garlic paste and cook till onion turn light pink.
- Then add chopped carrot, pumpkin, red bell pepper and tomato. Add basil and salt.
- Cancel the SAUTE MODE and then pressure cook for 2 mins. Do the quick pressure release and then check the vegetables.
- Now grind the cooked vegetables to smooth puree. You can use a hand held blender or cool the vegetables a bit and use a grinder/blender.
- Now add uncooked pasta with black pepper and chilli flakes and add water and pressure cook for 5 mins.
- Do Quick Pressure Release and open the lid. Now check the pasta.
- Add freshly ground black pepper powder, add chopped spring onion greens.
If you want you can add sautéed bell peppers, steamed broccoli , pitted and sliced olives. Saute the bell peppers and other veggies before making the pumpkin sauce sauce, take out and then add before serving pasta.
Cook Time for Pasta in Instant Pot
If you are cooking pasta for the first time in Instant Pot, cook time for pasta is just the half the time of the cook time given on the box instructions.
So if the Pasta Cook Time is 10 mins. set the Pressure Cooker timer to 5 mins. Do the Quick Release Pressure. This cooks Pasta to Al-Dante. If you want to softer pasta, set Timer to 6 mins.
I have used Penne Pasta, with cooking Time 10 mins, on the package. So, Instant Pot Cooking Time for this is 5 mins. Many people keep 1 min. less than the half of actual pasta cooking time.
How to cook Pasta in Indian Pressure Cooker(Stove top recipe)
To make pasta in Indian pressure cooker (one pot pasta recipe), follow the same steps of making sauce.
- Saute onion, ginger garlic in oil, till onions are light pink.
- Then add cubed pumpkin, chopped carrots and tomatoes and basil. Add 1/- 1/2 cup water, salt and pressure cook the veggies till 2 whistles. Let the pressure come down naturally.
- Now puree the cooked vegetables. When using a grinder jar, do not grind very hot veggies cool the veggies a bit and then grind.
- Then add uncooked pasta, add water till the level that pasta is soaked.
- The amount of liquid while cooking pasta should be equal to the amount of pasta used in the recipe. Or, an easy way to add liquid is, till the level of pasta which is the amount of water/broth plus sauce.
Serving Suggestions
Serve fresh/warm pasta with garlic bread or just like that. You can also pair it with your favourite soup/drink.
Refrigerate the leftovers in an air tight container for 2-3 days.
FAQ's
Reheat before serving in microwave( for 1 min HIGH) or on stove top in a pan. You can add 2 tbsp-1/4 cup water depending on how dry your pasta is.
You can re-heat pasta in oven/otg. Keep it covered with aluminum foil at preheat heat mode. IF the pasta is still isn't heated properly then cook for about 5-10 mins depending on the quantity of pasta. Stir it thoroughly so that there aren't any cold pockets left.
You can freeze pasta in small portions(as per the servings required). Stays good for about a month. The texture and taste may change after freezing.
Thaw in refrigerator overnight or on counter for few hrs. Then reheat in microwave or on stove top. Add little water as mentioned in the above section and keep the pasta covered so the steam doesn't escape out making pasta more dry and chewy.
