Healthy Pancakes with Health Friendly Flour
Years back when I started making pancakes, I referred lot of online recipes to get the prefect eggfree pancakes. Initially I used to make it with Maida or All Purpose flour but as I got more health conscious and especially for kids, I switched to Whole Wheat Flour and other healthy flour options like Millets Flour and Almond Meal or Coconut Flour. But what a shame , this is the first pancake recipe on my blog ( after 3 years of blogging). Since pancakes is always a morning affair, I just cudn't take pics. This weekend my kids wanted pancakes for breakfast and son asked me which pancake recipe I have on my blog and I was like... there is none. So here I am with my super easy quick and no fail Eggless Pancake Recipe with Whole Wheat Flour.
Ingredients for Eggless Whole Wheat Pancakes
My kids call these Apple Pie Pancakes as it tastes a lot like Apple pie. Few months back, I came across this recipe and loved how apples were added to pancakes giving it such an eye pleasing look. Original recipe has eggs in it, I modified the recipe without eggs.
Checkout the method/stepwise pics/video for the same.
Flour- Use any good quality Whole Wheat Flour(WWF) or Whole Meal. It should not have lot of barn as the texture will be different. You can also use unbleached All Purpose Flour(APF) or a combination of WWF and APF.
Add any other flour like millets flour, amaranth flour but the texture will be different.
I use Ashirwad/Pillsbury Brand or Bob Red Mill Whole Wheat flour/ Whole Meal.
Sweetener- Organic Raw Cane Sugar or any natural sugar like jaggery powder, coconut/palm sugar or maple syrup can be used. You can also use fine castor or powder sugar.
In the recipe I have used Desi Khand (organic raw sugar available in Indian markets/stores).
Buttermilk- Made with milk and vinegar, buttermilk acts as binder for the batter and also an egg replacer.
Please Note- Buttermilk is not the Indian Chass but it the one which we use in baking and is made with milk and vinegar. Vinegar curdles milk and then it added to the batter.
Baking Powder- This optional and used to make the pancakes rise. You can skip when making for your small kids/toddlers if you prefer not to add baking powder/soda in their food.
Flavoring- As I have used apples in the recipe, cinnamon is the best option to flavours the pancakes. You can also add vanilla essence with cinnamon as it makes the pancakes taste more flavorful.
Fat- If you are health conscious add olive oil or any good plant based oil. I add melted butter /olive oil. My kids love the buttery flavours that comes with the addition of butter. When using unsalted butter/oil and add about 1/4 tsp salt which brings out nice taste.
Apples- If you want to serve these pancakes in a bit of style then core the apples and cut into thin roundels. Or, you can simply grate the apples or thinly chop and directly add in the batter.

How to make Whole Wheat Apple Pancakes
If you like to add toasted apples then first toast apples on griddle in butter. Sprinkle sugar and cinnamon powder then toast it on griddle. It added a hint of nice caramelized taste.
- Make Buttermilk, combine milk and vinegar. Let it stand for 4-5 minutes.
- In another bowl add flour, baking powder(optional), sweetener, salt, cinnamon powder and mix well.
- Now add oil and vanilla essence(optional) to buttermilk, mix lightly.
- Add slowly to the dry ingredients and lightly mix. Do not over beat the batter as wheat may develop gluten and pancakes will be hard. NOTE--The batter should be lumpy, not too runny.
- If adding chopped/grated apple add at this step.
- Heat the griddle, brush it with butter/oil, then toast apples from both sides.
- Pour 1/3 cup batter over the apples.
- Cook from one side till the bubbles start appearing on the top.
- Carefully flip the pancakes, add butter/oil and cook for another minute.
- Serve warm pancakes with maple syrup/honey or apple butter or chocolate sauce.
