Vegetarian melt in mouth Raw Papaya Kebabs made in Air Fryer.

Raw Papaya Kebabs

RAW PAPAYA KEBABS are the popular Indian Vegetarian Snacks served at parties or relished during tea time. These kebabs are soft melt with a CREAMY SURPRISE!! at the center and made with minimum oil. Air frying these yummy soft and melt in mouth kebabs make it perfect choice for those looking for healthy snack options for their parties or get togethers.

Papaya is one of those ingredients that can be consumed as veggies (raw/unripe) and as fruit (ripe).You can add raw papaya in salads, make curries ( Raw Papaya Curry North Indian Style), chutneys (Raw Papaya Chutney) or as filling in stuffed parathas. And use in making cutlets or kebabs.

If your folks especially kids don't like raw papaya and then you can try these melt in mouth kebabs.

What are Kebabs

Kebabs are snacks of bite or a bit bigger than bite size, traditionally made with various meats grilled in ovens and tandoors or pan grilled /cooked. It has melt in mouth texture. Served with various chutneys and salads like Kachumber or simple spiced onion rings. Kebabs are believed to be originated in Turkey but now are famous all around the world. Now there are kebabs for vegetarians and vegans which can be made with various plant based or dairy proteins (as a substitute for meat) and vegetables and various spices.

Ingredients for Raw Papaya Kebabs

Raw Papaya- It is the star ingredient of the recipe. Use fresh papaya with green skin with no wrinkles.

Potatoes- Boiled potatoes add texture and structure to these kebabs. If you avoid potatoes in your diet (like Jains), you can use sweet potatoes instead.

Chickpea Flour- To bind the ingredients together and add a meaty texture to kebabs. In case you run short of chickpea flour, you can add oats flour/roasted black chickpea flour(sattu) or flax meal.

Herbs- Fresh Ginger, Green Chillies and Cilantro/Fresh Coriander.

Spices- Cumin powder, Coriander Powder, Amchur/Dry Mango powder, Red Chilli Powder, Salt as per taste and oil.

Others- Cream Cheese, Basil Pesto

Vegans can opt for DAIRY FREE CREAM CHEESE or YOGURT.

To add some zing to these kebabs I added creamy cream cheese and basil pesto filling in the center. My mom used to add filling of thick yogurt with green chutney in kebabs she made. I had a tub of cream cheese in my refrigerator so thought why not use it in my kebabs and see how it tastes. Since I didn't had green chutney, so I add my homemade basil pesto. I love using basil pesto and have made these yumm Paneer tikkas using it.

My kids and hubby loved this variation and so I am putting here in the recipe for all of you to try out.

It is totally optional. Instead of cream cheese you can use greek yogurt or hung curd or totally skip the filling.

Instead of Basil Pesto, you can add mint and cilantro chutney(not watery) or simply add chopped fresh coriander/cilantro and mint leaves.

How to make Raw Papaya Kebabs

  1. Boil Potatoes.
  2. Prepare cream cheese and pesto filling.
  3. Wash and peel papaya.
  4. Grate Papaya finely. Use your food processor or manually do it using a mandoline. do not thickly grate papaya, it will spoil the texture of kebabs.
  5. Squeeze out extra water from grated papaya.
  6. Completely cool the boiled potatoes.
  7. Now take a mixing bowl, add grated papaya, mashed potatoes and add all the spices in it.
  8. Add 1 tbsp of oil.
  9. Mix everything nicely.
  10. Now take small portions, flatten it on your palm, add a tsp of cream cheese filling. (This is OPTIONAL)
  11. Seal the edges nicely. there should not be any cracks, else filling will ooze out.
  12. Make all the kebabs in the same way.
  13. Brush with oil. Arrange in air fryer frying basket.
  14. Air Fry at 180C or 200 F for 15 mins.
  15. Serve warm with chutney of your choice or cream cheese and pesto dip.

Serving Suggestions

Serve these kebabs with chutney (Coriander and Mint Chutney, Roasted Bell Pepper and Garlic Chutney) of your choice or some creamy dip ( Creamy Spinach and Mint dip, Vegan-friendly Avocado and Mint dip)

Storing Raw Papaya Kebabs

These kebabs stay good for 2-3 days when refrigerated, and a week in freezer. I never stored more than that so can't comment if these stay good for a longer time. Reheat the frozen kebabs in air fryer/oven directly without thawing.

You can reheat these on skillet or griddle also, but you will have to watch it so that it doesn't burn. Oven and air fryer makes the work so easy and fuss free.

So do try these delicious melt in mouth Vegetarian Kebabs made in Air Fryer. You can also bake these for 15-20 mins, at 180C /200F.

Equipment

  • Air Fryer
  • Pressure Cooker to boil potatoes
  • Food Processor/Mandoline to grate Papaya
  • Mixing Bowl

Ingredients
  

  • 1½ Cups Grated Raw Papaya 1 medium sized papaya
  • 2 Boiled Potatoes medium sized
  • 1/4 Cup Chickpea Flour/Besan
  • 2 tbsp Fresh Coriander finely chopped
  • 1-2 tsp Fresh Ginger grated
  • 1-2 Green Chillies(optional) finely chopped

Spices

  • 1 tbsp Coriander powder
  • 1 tsp Roasted Cumin Powder
  • ½-1 tsp Red Chilli Powder/Paprika
  • ½-1 tsp Dry Mango Powder/Amchur
  • 1 tsp Salt or as per taste
  • 2-3 tbsp Oil

Instructions
 

  • Boil Potatoes.
  • Prepare cream cheese and pesto filling.

  • Add 1 tbsp of oil. Mix everything nicely.
  • Now take small portions, flatten it on your palm, add a tsp of cream cheese filling. (This is OPTIONAL).
  • Seal the edges nicely. there should not be any cracks, else filling will ooze out.
  • Make all the kebabs in the same way. Brush with oil. Arrange in air fryer frying basket.
  • Air Fry at 180C or 200 F for 15 mins.
  • Serve warm with chutney of your choice or cream cheese and pesto dip.

To bake

  • You can also bake these for 15-20 mins, at 180C /200F.

Shallow Frying on Pan/Griddle

  • Heat a griddle or pan on medium heat, add about 2-3 tbsp oil, cook kebabs from both the sides till golden brown.

Notes

Do not keep the prepared filling for long as papaya can leave more water due to salt in the mixture. IF you are preparing it ahead of making kebabs then do not add salt. Add it just before shaping kebabs and cooking.
Cream Cheese and Basil Pesto Filling-- It is totally optional. Instead of cream cheese you can use greek yogurt or hung curd or totally skip the filling. Instead of Basil Pesto, you can add mint and cilantro chutney(not watery) or simply add chopped fresh coriander/cilantro and mint leaves.

    Swaty what a twist to the traditional dahi kababs, using cream cheese. With pesto the raw papaya kebabs must have tasted so good. Wish I could make these right away but where I am at the moment, raw papaya is a 'luxury' item. To think that in Mombasa and India it is available in abundance. Adding yogurt and using farali flour these kebabs can easily be prepared for fasting day.
