It is officially summer in many parts of the world. The temperatures are soaring high and people just need something that soothes their system , light on stomach, good for digestion and also easy to make. Indian summers especially in Northern parts ,as everyone knows are dry, with soaring only high temperatures and sun shining at its peak. Ever since we have known people have been using summer coolers like Nimbu Pani(Indian Lemonade), Sherbets and homemade kulfis(Indian ice creams) and yogurt based preparations to keep the body, cool, hydrated. These summer coolers also help the digestive system in order.
Homemade yogurt based preparations like Chass, Lassi, Raita are very common in India and are the part of everyday meal. Yogurt also known as Dahi/Curd in India,is a probiotic, keep the digestion , rich source of calcium and is good for skin, hair. It is a wonder dairy product can be used for making smoothies, dips and in many other food preparations.
Today, I have here one of the simplest and most popular variation of yogurt Indian Lassi and it’s variation Pineapple Lassi..
Lassi is a blend of yogurt with water, sugar/salt with or without fruits. It is very popular in Northern parts of India. During summers you can see so many lassi counters in commercial areas. For many it is one of the best summer cooler which is also filling while out in sun for work.
How Lassi is prepared and it’s variations
Making Lassi is very easy. Traditionally people used Mathni or Churner to mix yogurt and water with sugar or sat in a pot, to make basic Lassi. But nowadays we make it in blender. Basic Lassi is just yogurt mixed with water, sugar or salt. Cumin powder is added to the salty version and cardamom powder is added to the sweet version. Many people like to add ice cubes while making it, I do not like it as Lassi gets little watery once ice starts melting. I add chilled water to it.
The other popular version of lassi is Mango Lassi where Mango purée of fresh seasonal mangoes is added to Lassi. Nowadays lot fruity variations of Lassi are there. People are experimenting with all kind or fruits to make this delicious drink. Checkout this Mango Thandai Lassi Recipe where mango and yogurt are blended in Thandai Masala flavors.
With fruit purees you can adjust the quantity of sugar as per the sugar content of fruit. You can also add any other natural sweetener if you do not want to sugar.
Plain Lassi and Mango Lassi are our favorite, but recently I experimented with Pineapple with Mint leaves, in lassi and we absolutely loved it.. It has a Khatta Meetha taste( a little sweet and a little tangy taste).
Pineapple Lassi can be compared to Yogurt Pineapple Smoothie , with the difference in consistency. Smoothies can be little thick, whereas with the addition of water Pineapple Lassi is it’s thinner version.
I don’t add sugar to my fruit based lassi as I feel it was quite sweet due to fruit in it. My hubby and kids like some sugar as they like sweeter lassi.
Let’s quickly see how I made this delicious fruity Pineapple and Mint Lassi..

Pineapple and Mint Lassi
Ingredients
- 2 Cups Yogurt/Curd/Dahi
- 1 Cup Pineapple Pieces
- Handful of Fresh Mint leaves(10-12)
- 1/4 tsp Chaat Masala
- Sugar/Sweetener as required
- Chilled Water as per required consistency of Lassi
Instructions
- In a blender, add yogurt, pineapple pieces, mint leaves. Add sugar if using.
- Add water as per required consistency.
- Blend till smooth consistency.
Do try this variation of Lassi and you will absolutely love it. Make it apart of your summer brunch / barbeque parties.
