Pineapple and it's benefits
Pineapple is one of our favourite fruits and my kids love having it in their fruit bowl. Juicy Pineapple is a treat to add in salads, ice creams, cakes and desserts.
Pineapple not only tastes good but also is loaded with nutrients like manganese, Vit.C, antioxidants and digestive enzyme Bromelain. It helps in digestion of food in people who have pancreatic insufficiency. Bromelain is also used a commercial tenderizer for meats due to it's ability to breakdown tough proteins.
Pineapple is also known to aid weight loss and is included in many weight loss diets. It is loaded with fibers and water, so keep the tummy full for hrs. thus curbing the unnecessary hunger pangs.
Why Grilled Pineapple
Raw pineapple pieces when added to dairy products like curd/yogurt for smoothies turn it bitter. This happens due to the presence of bromelain which breaks down the protein casein. It is best to cook pineapple for a while, cool it and add in smoothies or raita. Also, after eating fresh pineapple many people get burning sensation in their mouth especially on lips, palate. This is also due to the enzyme bromelain which in a way is starts acting on the tender skin of mouth.
Bromelain is mainly concentrated in the center of the pineapple that's why many people discard the core before using pineapple in dishes.
Another way to is use canned pineapple in which pineapple pieces are already heat treated. Choose pineapple that is
Lightly cooking or grilling pineapple slices, lessens the effect of Bromelain enzyme present in the fruit. It is this enzyme which makes the dairy bitter when raw pineapple pieces are added. Also, if you experience burning sensation inside mouth while eating fresh pineapple, cook/grill for a while and then use as required.
Grilling Pineapple gives it a nice smoky charred taste and aroma. You must have tried Grilled Pineapple in Asian Flavors now try pineapple in Indian Spices.
How to choose Pineapple
Always choose Pineapple which is golden in color. It should have a frim shell but a bit soft when squeezed and have soft and sweet smelling bottom. Pungent smell indicates an overripe pineapple.

Pineapple Slices- You can clean and core pineapple at home, or you can buy the store bought cut pieces. Cut in roundels or any shape that you prefer. But make sure to cut pieces in almost equal sizes, this ensures evenly cooked pieces.
