Why Instant Dosa recipes
Dosa is savory Indian crepe (can crisp or soft) made with fermented rice and split gram lentil(urad dal) batter. To make dosa batter rice and lentils are soaked for 6-7 hrs, grind in fine paste and then kept for fermentation. Preparing dosa batter takes around a day. Instant Dosa recipes do not require all above preparation. It is a 15-20 min. preparation time which makes these recipes ideal for those with busy morning schedules.
Ragi a Nutritious Millet
Ragi or Finger Millet is one of the healthiest flour that is gluten-free and very nutritious. It is rich in fibre, calcium, iron and has cooling properties. It is also a natural relaxant and due to significant amount of Vit. C and A it is very good for hair, skin and overall general health.
I like to use it quite often for making quick and nutritious dishes like this Instant Dosa, Idli, Ragi porridge. You can also add some Ragi flour to your chapati Atta (whole wheat flour) while making chapatis.

Ingredients to make Instant Ragi Dosa
Ragi Flour- Use a good quality Ragi Flour. Avoid using flour that is kept for long time, as it may give a rancid smell or after taste.
Rice Flour- Ragi is a gluten-free flour, I add some rice flour to it to make it crispy. You can use tapioca flour or cornstarch also in case you do not want to add rice flour.
Flaxseeds- I also like to add flaxseed powder. You can skip it or may add sesame seeds. Flax seeds are rich in Omega-3 , antioxidants, fibre along with minerals and vitamins.
Other Ingredients- Fresh Coriander leaves, Ginger, Green Chillies(add as required), Red Chilli powder (optional and as required), Cumin seeds, Salt as per taste.
Use Desi Ghee or any flavorless oil for cooking dosa.
How to make Nutritious Instant Ragi Dosa
I make Ragi Dosa very often for breakfast as it is takes just a few minutes for preparing and cooking. Healthy nutritious and delicious.
You can add finely chopped ginger and green chillies or coarsely crush in mortar and pestle.
Mix all ingredients together, make batter of flowing consistency, keep for a resting time of at least 15-20 mins.
When the griddle is hot enough, pour batter on griddle, spread in a circular disc and cook on both sides.
Serving Suggestions
Serve hot and crispy Ragi Dosa with your favorite chutney or tomato ketchup.
I love it with Rajasthani Lehsun ki Chutney, Roasted Bell Pepper Garlic and Tomato Chutney and Coriander and Mint chutney.
Other Chutney recipes
Red Coconut Chutney, Chutney for Idli, Tomato Dates Chutney, Amla Chutney.
You can also serve it with some pan fried paneer/peas or sprouts as filling. It makes it more nutritious filling and a prefect light meal.

Ingredients
- ยพ Cup Ragi/Finger Millet Flour
- ยผ Cup Rice Flour
- 2 tbsp Flaxseed Powder
- 1-2 Finely Chopped Fresh Coriander/Cilantro leaves
- 1 tsp Cumin Seeds/Jeera
- 1 tsp Red Chilli Powder optional
- 1-2 Finely Chopped Green Chillies optional
- Salt as required
- Ginger- small piece
- Desi ghee/Oil for Cooking Ragi Dosa
Instructions
- Mix all the flours together along with salt, cumin seeds, coriander leaves, red chilli powder or green chillies with crushed ginger and salt.
- Add sufficient water and make a thin batter of flowing consistency.
- Heat a griddle, pour spoonful of batter on griddle and make circular and thin crepes.
- Cook on both sides using desi ghee or oil.
- Serve hot with curd/yogurt and chutney of your choice.
Make this nutritious dosa for your breakfast or quick and light dinner option. I serve it with plain curs to kids along with some chutney. It goes well any chutney of your choice like Green Chutney, Rajasthani Lehsun ki Chutney, or Roasted Bell Pepper and Tomato and Garlic Chutney or Coconut Chutney.
