Protein rich, easy and quick Vegetarian Black Bean Salad Recipe | Black Bean Salad served in Crunchy Taco Shells

In mood for Mexican food or want to have Taco night but not sure what to decide or don’t want elaborate meal. Here I bring you a super quick Mexican salad recipe that you can fill in crunchy Tacos or enjoy just like that with Nachos or Doritos.

Quick and easy salad or mini meal or starter for parties and get togethers. Black Bean Salad with protein rich black beans with salad veggies that you can serve in different ways. It can be a snack, a starter or a mini meal. It is budget friendly too and can be easily made for big gatherings.

We love this super easy and so delicious Black Bean Salad and even my kids enjoy it. Once every fortnight this are our to go meal either for weekend afternoon or Friday Taco Night!!

We love Mexican food, and while writing the post I realized I have very few recipes for one of our favourite cuisine. Our favourite movie time snack is Nachos served with Guacamole and any of our favourite Salsa like this Mango and Strawberry Salsa when Mangoes are in season..

On cold fall and winter nights, I love this Vegetarian Nachos Soup. Other favourite are these Cheesy Jalapeno Poppers.

Mexican Food

Mexican food is very popular among Indians as the ingredients and flavors have so much in common. Indians like the heat in their food, spicy food, and so do Mexicans. The food is so vibrant and colorful with the use of bell peppers, tomatoes and salad veggies.  Mexican food is cooked in lot of garlic and in tangy flavors. Lots of beans like Black Beans, Kidney Beans are used in cooking along with veggies like corn, zucchini, squash, tomatoes, peppers, avocado are few to name here.

For this theme and month my partner is Kalyani Sri from Sizzling Tastebuds. She gave Chilli Flakes and Lemon Juice as the secret ingredient to me and I gave her Cumin and Garlic Powder. She made Mexican Rice Burrito with Roasted Cauliflower and Taco Ranch Dressing for the theme .

Ingredients for Vegetarian Black Bean Salad with Crunchy Tacos

Black Beans – I used canned black beans. I always keep a few cans of beans so that I can use it whenever I need to use it in my cooking if needed urgently. You can also add red kidney beans if you want.

Veggies and Herbs – Boiled Corn(I used frozen),cherry tomatoes, cucumbers, red onions, lettuce , cilantro/fresh coriander leaves.

Salsa – Homemade or store bought

Sour Cream– Dairy or any plant/nut based for vegan friendly salad. Or, try this Vegan Creamy Cilantro dip without any cream. Incase you don’t have Sour Cream or don’t want to use it, you can also add greek yogurt.

Others(as required)— Lemon Juice, red chilli flakes, black pepper, salt.

Crunchy Tacos or Nachos to serve the salad.

There is no specific measurement for the ingredients here. You can add the veggies and seasoning as per your preferences. In the recipe card I have given the ingredients as per 1 15 Oz. can of beans, that can be served for 2.

What are Black Beans and it’s Benefits

Black Beans are classified as legumes and are also known as Turtle Beans due to the hard shell of the bean. They’re three times cheaper than chicken, beef, or fish, and loaded with with fiber, folate, potassium, and protein. One of the best source of protein for Vegans and Vegetarians. Popularly used in Mexican Cuisine, you can add these to soups, stews, make filling for quesadillas, sandwiches and many more.

Black Beans are rich source of magnesium, so help to strengthen the bones, lower bad cholesterol. Potassium in these beans help to keep the blood pressure levels low, and the fibre helps to clear constipation and keeps the bloating away.

You can substitute Black Bean with Rajma or Red Kidney beans in the recipes.

How to make Vegetarian Black Bean Salad

It is such a breeze making this salad , just mix all the ingredients together and serve as required.

To serve in  hard shelled Tacos, microwave it as per the package instructions, fill in the salad and serve. Or simple enjoy it as salsa with Nachos, Pita chips or Doritos.

Vegetarian Black Bean Salad served in Crunchy Corn Tacos | Black Beans, Salad Veggies, Sour Cream and Salsa mixed together to make a delicious, healthy and filling salad.

  • Mixing Bowl

For Black Bean Salad

  • 15 Oz Canned Black Beans or 400 gms
  • ½ Cup Sweet Corn
  • 1 Cup Finely Chopped Lettuce
  • 1/2 Cup Finely Chopped Red Onions or as required
  • Finely Chopped Cucumbers as required
  • Cherry Tomatoes halved as required
  • Jalapenos as required
  • Sour Cream as required
  • Tomato Salsa(Homemade or Store bought)
  • Sour Cream as required
  • Salsa as required
  • Red Chilli Flakes as required
  • Black Pepper Powder optional and as required
  • Salt as per taste


  • Chop all the vegetables as per the required size to add in salad.
  • In a pan, boil water and add frozen sweet corn. Let it stand for a few minutes and then drain away the water.
  • Open the can of beans and drain the liquid. You can cook beans a bot as per the instructions on the can. Let it cool before making to salad.
  • In a mixing bowl add beans, corn, onions, tomatoes, lettuce, cucumbers, salsa, lemon juice, chilli flakes, freshly grind black pepper powder, add sour cream as required.
  • Mix everything together. Top with finely chopped cilantro/fresh coriander.
  • Relish it with nachos or filling in taco shells.

To make Crispy Taco Shells

  • Cook Tacos as per the instructions on the package.

Assemble Tacos and Salad

  • To serve salad in tacos, fill tacos with the salad, top with more salsa, sour cream, cheese, pico de gallo.


Make Pico de gallo with onions, tomatoes, jalapenos, lemon and cilantro and add to salad.
I have not added any cheese here but you can add as per your preference.
