You too will agree with me that some the most nourishing recipes are so easy and quick to make. This Carrot and ginger soup is just that recipe. It is Vegan Friendly, Gluten-free and kids friendly too!!! Yes a soup that even your kids will finish it happily.
This warm and nourishing soup is made with just the handful of pantry staples and is a one pot under 30 mins. recipe.
The soup is lightly spiced and the main flavour is from carrots and ginger and that secret ingredient. You can make it spicy as per your preference and heat tolerance.
Ingredients to make Carrot and Ginger Soup
Carrots- I like to use fresh juicy carrots in the recipe. You can use orange carrots or red carrots (for readers from India) or a combination of both.
Herbs- Ginger, Garlic, , Onions(red, white, yellow any will be good). Fresh coriander/rosemary for garnish. Instead of onions you can use shallots or celery.
Orange peel and Orange Juice- The secret ingredient in the recipe for a refreshing flavour! Grated orange peel and orange juice add a nice citrusy kick to this soup. And this is totally optional. But, I will suggest to add this for a refreshing flavour.
Spices- Bay Leaf, Cumin Powder, Garam Masala, Black Pepper Powder. Chilli flakes and paprika for the heat and smoky flavour.
Oil- Olive Oil/Avocado oil or Butter especially when making for kids. (missing from the below pic)
Method to make Carrot Soup
This is a one pot recipe and the soup is ready under 30 mins.
Chop carrots roughly in bite size cubes. Chop onions and coarsely crush ginger and garlic.
Heat oil in a pan, add bay leaf, then add ginger garlic and chopped onions and saute till onions start turning light pink.
Then add carrots, saute for while, add cumin powder and garam masala. Add orange zest and orange juice.
Add vegetable stock/water, cover the pan and cook for about 10 mins. or till the carrots are tender.
Cool it a bit then puree it in a blender or use a hand held blender. When using a blender make sure to cool it completely as the steam expand which can push the top off and may cause burns and mess.
Transfer the pureed soup back in the pan. Add orange peel and orange juice.
Cook it again for a while. Serve hot topped with herbs of your choice.

Skip sautéing onions, ginger and garlic. Add all the ingredients all at one time and cook carrots till tender and soft. Puree using a blender or immersion blender.
You can store Carrot Ginger soup in freeze friendly containers as per the portion required and freeze for about a month. Thaw it and reheat in a pan. Add some water/vegetable broth to adjust the consistency of soup.

Ingredients
- 4 Carrots (Orange/Red Carrots)
- ½"-1" Fresh Ginger
- 4-5 Garlic Cloves
- 1 small Onion
- 1 tbsp Olive Oil or any other plant oil
- 1 Bay Leaf
- 1 tsp Cumin Powder
- Chilli Powder/Paprika (as required) optional
- ½ tsp Garam Masala
- Zest of 1 Orange optional
- Juice of 1 orange optional
- Freshly ground Black Pepper as required
- Fresh Dill/Cilantro/Rosemary
- Vegetable Stock/Water as required
- Salt as required
Instructions
- Chop carrots roughly in bite size cubes. When using red carrots discard the inside hard part.
- Chop other vegetables (onion, ginger, garlic).
- Zest the orange and squeeze out it's juice. This step is optional. but I suggest you to try it.Zest of 1 Orange, Juice of 1 orange
- Heat oil in a pan, add bay leaf, then add ginger garlic and chopped onions and saute till onions start turning light pink.½"-1" Fresh Ginger, 4-5 Garlic Cloves, 1 tbsp Olive Oil, 1 Bay Leaf, 1 small Onion
- Then add carrots, saute for while, add cumin powder and garam masala. As chilli powder as required.4 Carrots, 1 tsp Cumin Powder, ½ tsp Garam Masala, Chilli Powder/Paprika (as required)
- Add orange zest, orange juice, vegetable stock/water, cover the pan and cook for about 10 mins. or till the carrots are tender.Juice of 1 orange, Vegetable Stock/Water, Zest of 1 Orange
- Take out the bay leaf before pureeing the vegetable.
- Cool it a bit then puree it in a blender or use a hand held blender.
- Transfer the pureed soup back in the pan and cook it again for a while.
- Sprinkle freshly ground black pepper and serve hot topped with herbs of your choice.Freshly ground Black Pepper, Fresh Dill/Cilantro/Rosemary
How to make Carrot Soup in Instant Pot
- To make switch on the SAUTE MODE for 5 mins. Heat oil and then saute ginger garlic onions till onions turn light pink.Add all the other ingredients along with vegetable stock. Cancel the SAUTE MODE and then set the Pressure Cook Mode for 10 mins. Cook and then let the pressure release naturally. Let it cool a bit then puree the carrots. Cook again for 2-3 mins and then serve hot.
How to make Carrot Soup in Indian style Pressure Cooker
- Follow all the steps of sautéing onion, ginger garlic and then adding the chopped carrots, spices, vegetable stock, orange juice and zest. Then close the lid and cook till 2-3 whistle. Let the pressure release naturally. Puree the soup once it is a bit cool. Then cook it again for 2-3 mins. and serve hot.
