Aloo Tamatar, simple and easy to make No Onion Garlic curry with boiled potatoes and tomatoes. This curry can be made for everyday meals and even for auspicious occasions, festivals and parties. Served with Indian flatbreads like Poori, different types of paratha and even chapati.
About the Recipe
Potato is one of the most common, popular and staple vegetable in India. All across India, potatoes are used in many recipes for snacks, curries and many more. It is not only delicious but also very quick and easy to make.
Whenever in hurry or can't decide what to make for lunch/ dinner make this super easy and yummy curry. You can adjust the consistency of curry and the spice level as per your preference.
What is Aloo Tamatar Ki Subzi
Rassa is thin to medium consistency curry, Aloo is Potatoes and Tamatar is Tomatoes. Rassewale Aloo Tamatar is spicy curry of potatoes in spicy tomato gravy with simple spices like coriander powder, red chilli powder, turmeric powder.
Aloo Tamatar ki Subzi is so common everyday curry in North Indian homes and everyone has their own way of making it. You can make this curry using pre boiled potatoes in kadhai/open pan or with raw potatoes in pressure cooker. If you have traveled anywhere in Northern India to the states of Rajasthan and U.P you must have surely enjoyed Aloo Poori or Aloo Kachoris for breakfast at the local halwai (sweet)shops!!
Variations of Aloo Ki Sabzi
Another version of this curry is Bhandarewale Aloo. It is served in temples or bhandaras (community lunches). It is a more spicy version of simple Aloo Tamatar and we serve it with Pooris.
There is another variation of this curry, without tomatoes known as Hing-wale Aloo(Potato curry with asafoetida) as hing/asafoetida is used in making this curry.
Mathura ke Dubki wale Aloo is another version of potato curry which is very popular in Mathura city(in North India) and is served with Dal ki Kachoris.
Why we love Aloo Tamatar
The reasons why Aloo Tamatar is so popular in North India
- Easy and Quick to make, when unannounced guests come over.
- No fancy ingredients are required. Simple spices available in your pantry are used.
- It is Vegan and can be made gluten-free(skip asafetida or use gluten-free).
- Goes well with different Indian flatbreads like Poori, Paratha or chapatis. We love to have it even with simple Khichdi and Steamed rice.
- Kids friendly and the spices can be adjusted as per one's preferences.
Ingredients to make Aloo Tamatar
Potatoes- Pre Boiled potatoes are used to make this curry. You can also make it in pressure cooker using raw potatoes. Will cover in a different post.
Tomatoes- I prefer pureed Tomatoes in the recipe. You can also use Tomato sauce/puree (not Tomato ketchup) in the recipe if fresh tomatoes are not available.
Spices- Combination of spices like coriander powder, cumin seeds, turmeric and red chilli powder adds flavourful tase. Skip hing/asafetida for a gluten-free version.
Oil- In North India, we use mustard oil to make this curry. Also, I use ghee whenever I make it for prasad or bhog on festivals.
How to make Homestyle Aloo Tamatar Subzi
- Boil potatoes and cool it completely. Mash potatoes in big chunks.
- Puree tomatoes, ginger and green chillies.
- Heat oil in a pan. Add hing and then jeera to hot oil.
- When the seeds splutter and get light brown color, add tomato puree and cook for 2-3 minutes till it starts leaving oil.
- Add dry spices/masala powders( coriander, red chilli and turmeric) and mix nicely. I also add ½Tsp of Kasuri Methi( dry fenugreek leaves). It gives a nice aroma and flavor to the curry.
- Add potatoes and mix with tomato masala. Add enough water as per desired consistency. Cook for 2-3 minutes till the curry thickens a little.
- Garnish with chopped fresh coriander.
Serving Suggestions
Aloo Tamatar with Poori is one of the best weekend brunch and festive meal or when guests come over. Aloo Poori with aam ka achar and boondi raita for a complete scrumptious and traditional meal.
I also serve it with different type of paratha like Methi Paratha, Chana Dal Paratha, Sattu Paratha.
Aloo ki Sabji is also goes well with Matar ki Kachori and Rajasthani Pyaaz ki Kachori.
U.P special Bedmi Poori is a popular meal combination with Khatta Meetha Kaddu ki Subzi.

Ingredients
- 3-4 Medium Boiled Potatoes
- 2 Medium Tomatoes
- 1-2 Green Chillies
- Small Ginger piece
- ¼ tsp Hing/Asafetida
- ½ tsp Cumin Seeds
- 1-2 tsp Coriander Powder
- ½ tsp Turmeric Powder
- ½-1 tsp Kashmiri Lal Mirch/Red Chilli Powder
- Salt to taste
- 2 tbsp Mustard Oil or Desi Ghee
- Fresh Coriander for Garnish
Instructions
- Take boiled potatoes and peel it.3-4 Medium Boiled Potatoes
- Mash it coarsely. Do not make it pasty.
- Puree tomatoes, ginger and green chillies.2 Medium Tomatoes, 1-2 Green Chillies, Small Ginger piece
- Heat oil in a kadhai or pan.2 tbsp Mustard Oil or Desi Ghee
- Add hing and cumin seeds.¼ tsp Hing/Asafetida, ½ tsp Cumin Seeds
- When cumin crackles, add tomato puree.
- Cook tomato puree for 1-2 mins.
- Add spice powders, mix and cook it till oil separates.1-2 tsp Coriander Powder, ½ tsp Turmeric Powder, ½-1 tsp Kashmiri Lal Mirch/Red Chilli Powder, Salt to taste
- Add mashed potatoes, salt to taste and add water as per desired consistency.
- Cook for 1-2 mins. Garnish with chopped coriander.Fresh Coriander for Garnish
- Serve hot with Poori or parathas.
