Delicious creamy Vrat Ki Kheer or Sama Rice or Barnyard Millet Kheer Recipe with Carrots and nuts

Sama Ke Chawal ki Kheer with Carrots, a delicious kheer made with Sama Rice/Chawal, fresh healthy Carrots, Nuts and Raisins. It is consumed during fasting days and even on regular days. Also, if you avoid rice in your diet you can make this kheer. My kids love this kheer as it tastes almost like their favorite Rice Kheer.

It is Gluten-free and Vegan Friendly(use plant milk).

About the Recipe

Many people in India abstain from consuming grains during certain days like Navratri, Shivratri, Janamashtami or Ekadashi. Sama Rice Kheer is made with Sama rice or Barnyard Millet during the fasting days, along with other fasting food or vrat ka khana like Sabudana Khichdi, Kuttu ke Ka Paratha/Poori etc.

Sama rice kheer tastes not only delicious just like Chawal ki Kheer/Rice Pudding but is also light on stomach and easily digestible. It can be given to all age groups from toddlers to seniors in the house.

Sama Rice Kheer is Gluten-free and Vegan Friendly and can be made easily in a pan or even in your IP.

What is Sama Rice/Barnyard Millet

Sama Rice or Barnyard Millet, a gluten free grain(millet), that is consumed in India especially during fasting days as a substitute for Rice. The grain is smaller in size, but the cooked grain tastes like rice. It is one of the nutritious grains which is rich in protein, fibre and carbohydrate. The gruel of Sama rice can be given to babies.

Sama Rice Pulao, Sama Rice Kheer are common dishes made with it. Nowadays people also make Sama Rice Dosa and Idlis. You can also make cutlets with potatoes or sweet potatoes and many other delectable dishes using this grain along with gluten-free flours or other ingredients used during fasting days.

Sama Rice Kheer for Navaratri

Chaitra Navratri falls in the month of March or April. It is a nine day long fasting period for Hindus in India, where they fast and worship nine forms Goddess Durga. Many people fast for 2 days and many for full 8 or 9 days. During this time the weather starts getting too hot especially in North India majority of people keep fasts. So if while fasting you want something cool, filling and refreshing then make this kheer. Chill in refrigerator for a couple of hours and eat.

Ingredients to make Sama Rice Kheer with Carrots

Sama Rice/Barnyard Millet and Milk are the main ingredients.

You can also make this kheer with plant milk if you have lactose intolerance or are vegan.

Carrots- I have used orange carrots. Red Delhi carrots can also be added when in season. Grate carrots finely.

Others- Nuts(Almonds, Cashew nuts, Pistachios or Chironji) , Raisins and sugar(Raw cane sugar).

How to make Vrat Ki Kheer/Sama Ke Chawal Ki Kheer

Sama Rice kheer can be prepared very quickly and is ready in 20 mins.

Wash and soak sama rice for about 15 mins.
Grate Carrots
Chop nuts
Keep milk for boiling at low flame
Drain from rice and add to boiling milk
Add grated carrots
Cook kheer till it is thick

Storage and how long can we store Vrat Ki Kheer

For fasting days/vrat people make fresh batch. If you are making it for regular days then you can make it 1-2 days ahead and refrigerate.

Leftovers can be refrigerated in an air tight container and stay good for 1-2 days. Milk products should not be kept for long.

You can have it chilled or warm.

Reheat it in microwave for 1-2 mins. or in a pan on stove till is it warm/hot enough to eat.

If it thickens, add milk as required to adjust the consistency.

Equipment

  • Pan/Kadhai
  • Ladle
  • Peeler
  • Grater
  • Measuring Cups and Spoons

Ingredients
  

  • 2 tbsp Sama Rice/ Barnyard Millet
  • 500 ml Whole Cream Milk
  • ½ Cup Finely Grated Carrots
  • 1-2 tbsp Finely Chopped Almonds
  • 1 tbsp Raisins
  • ¼ tsp Cardamom Powder/Elaichi Powder
  • Sugar as required

Instructions
 

  • Wash and soak Sama Rice in water for at least 15 minutes.
    2 tbsp Sama Rice/ Barnyard Millet
  • Chop almonds and other nuts(if adding).
    1-2 tbsp Finely Chopped Almonds, 1 tbsp Raisins
  • Grate carrots(finely).
    ½ Cup Finely Grated Carrots
  • In a heavy bottomed pan, keep milk to boil medium flame. Add cardamom (crush it and then add).
    500 ml Whole Cream Milk, ¼ tsp Cardamom Powder/Elaichi Powder
  • When the first boil comes, lower the flame, drain water from soaked sama rice, add to milk, along with grated carrots , nuts and raisins and mix.
  • Cook till  rice starts to thicken.
  • Then add sugar, mix well and cook for another 2-3 minutes.
    Sugar as required
  • Serve hot or chilled.

You can skip carrots if you want.
For plant based/vegan kheer, use any plant milk like almond or coconut.

    Swati I often make sama kheer especially during Ekadashi fasting. However never tried with carrot added to it. Good idea. Will try it next time to make it even more wholesome and healthy.
