Bhandare wale Aloo is a spicy No Onion Garlic Potato curry which is made for pooja/ Bhandara/community lunches. It is a traditional North Indian curry, especially served with Poori.
It is also known as Halwai style Aloo ki Subzi as it is a popular breakfast item sold at various Halwai shops. The flavours of this curry are to die for. You can make it not only for Pooja but also for special and festive occasions.
About the Recipe
Bhandare wale Aloo ki Sabzi is a popular curry from Uttar Pradesh. It is a no onion no garlic curry which is relished with hot fluffy Poori or Kachoris. It is a more spicy and rich version of simple Aloo Tamatar, which is popularly made for everyday meals and also for special occasions.
Other then being served at Bhandara, this spicy potato curry is also served as breakfast item along with masala poori, kaddu ki subzi and boondi raita and also many halwa at Halwai shops and various functions. And that's why it is also known as Halwai Style Aloo ki Subzi as it is also sold at Halwai shops.
What is Bhandara
Bhandara is free community lunch served in Hindu temples or organized by people on roadsides. Food served in Bhandara is made without onion and garlic. The taste and flavours of food served in bhandara is so divine that people wait in long queue to get the prasad.
Ingredients to make Bhandara Style Aloo
Potatoes/Aloo- We use boiled potatoes are used to make this curry. You can boil potatoes in Instant Pot or in Indian Style Pressure cooker. Peel boiled potatoes and break it into big chunks. Do not mash it like paste or make it pasty.
Tomato Puree- Puree tomatoes with handful of Coriander leaves, ginger and green chillies.
Spices- These add and enhance the flavour and aroma of the this curry. Whole spices like Bay Leaf, Whole Red Chili and powdered spices like and Coriander Powder, Turmeric powder, Red Chilli powder are used. Use Asafetida if there are no gluten allergies.
A combination special spice mix made from coriander seeds, fennel seeds and cumin seeds makes it different from your regular aloo tamatar subzi. This spice mix imparts a divine taste and flavour.
Other ingredients- You can use desi ghee when making for prasad. Else you can also use mustard oil.
How to make Bhandare Wale Aloo ki Subzi
- Boil potatoes, completely cool it and then peel it. Break into big chunks with hand.
- Make puree with tomatoes, coriander leaves, ginger and green chilies.
- Take Coriander seeds, cumin seeds and fennel seeds and grind coarsely in a grinder or use motar pestle.
- Heat oil/ghee in a pan. Add asafetida and cumin seeds. Next add whole spices and powdered spice mix.
- Make curry masala with tomato puree and powdered masala.
- Add mashed potatoes and mix lightly. Add water as per the desired consistency.
- Cook curry for 2-3 mins. on medium flame.
- Finally add dry fenugreek leaves/kasuri methi.
- Add chopped fresh coriander leaves before serving.
Serving Suggestions
This curry goes best with Ajwain Poori. It is also served with Kachori at Halwai shops.
Pair it with plain or ajwain parathas or methi paratha for hearty weekend breakfast or brunch.

Ingredients
- 4-5 medium Boiled Potatoes
- 2 Tomatoes
- Coriander Leaves and stems
- 2-3 Green Chillies
- ½" Ginger piece
Spices
- 1-2 Bay Leaf
- 1-2 Dry Whole Red Chillies
- ¼ tsp Hing/Asafetida
- ½ tsp Cumin Seeds
- 1 tsp Coriander Powder
- ½ tsp Turmeric Powder
- ½-1 tsp Red Chilli Powder
- ½ tsp Garam Masala
- 1 tsp Dry Fenugreek Leaves / Kasuri Methi
- Salt to taste
- 2 tbsp Desi Ghee/Oil
Special Spice mix for curry
- 1 tsp Coriander Seeds
- ½ tsp Cumin Seeds
- ½ tsp Fennel Seeds
Instructions

- Coarsely grind coriander seeds, fennel seeds and cumin seeds.
- Make puree with tomatoes, coriander leaves, ginger and green chilies.2 Tomatoes, Coriander Leaves and stems, 2-3 Green Chillies, ½" Ginger piece
- Take Coriander seeds, cumin seeds and fennel seeds and grind coarsely in a grinder or use motar pestle.½ tsp Cumin Seeds, 1 tsp Coriander Seeds, ½ tsp Fennel Seeds
- Heat oil/ghee in a pan. Add asafetida and cumin seeds.¼ tsp Hing/Asafetida, 2 tbsp Desi Ghee/Oil, ½ tsp Cumin Seeds
- Next add whole spices and powdered spice mix of coriander seeds, fennel seeds and cumin seeds. Cook on low flame for few minutes.1-2 Bay Leaf, 1-2 Dry Whole Red Chillies
- Add tomato puree and cook till oil separates.
- Next add turmeric powder, coriander powder, red chilli powder as required. Mix and cook for few seconds.1 tsp Coriander Powder, ½ tsp Turmeric Powder, ½-1 tsp Red Chilli Powder
- Add mashed potatoes and mix lightly. Add water as per the desired consistency. Cook curry for 2-3 mins. on medium flame.
- Finally add salt and dry Fenugreek leaves/Kasuri Methi.1 tsp Dry Fenugreek Leaves /, Salt to taste
- Add chopped fresh coriander leaves before serving.
- Serve hot with poori or any of your favourite paratha or kachori.
