Ingredients to make Mango Shrikhand/Amrakhand
Mango- I love making it when fresh mangoes are in season. Choose any sweet variety of mango. In Maharashtra and other western and coastal parts of India Alphonso Mango is used. But you can make it with any local variety like Kesar, Desheri. Ensure the mango is sweet and juicy. You can also make it using canned or frozen mango puree. Thaw the frozen puree and check sugar when making it with canned puree.
Thick Yogurt- You can make hung curd at home with your regular yogurt. If you are in hurry and pressed on time then you can also use thick Greek Yogurt. Check the section below on HOW TO MAKE HUNG CURD AT HOME.
Sweetener- Use any raw sweetener. I use raw cane sugar or khand sugar to make desserts. It is better than the pure white sugar which is somewhat more processed. You can add castor sugar also. Using darker color sugar like jaggery, coconut palm sugar may give a slight different color to the dessert.
Flavour Enhancer- Cardamom and Saffron (dissolved in milk) are used to enhance the flavour and also add nice color to shrikhand.
